Raicilla is the byproduct of this variety of Agave. It takes seven years for the harvest. Pictured here is one of my favorite views, on the path to Chacala. If you ever find yourself near Chacala or Moscotita, look for the taverno of Manuel and his son, Choan. They are truly the masters of this highly skilled art. Samples can be found daily in Yelapa, ask me and point you in the right direction. It is important to note that raicilla is all natural, no additives or perservatives…unlike tequila.
